thankful time

I mentioned I was going to the suburbs to see my sister and her friends Saturday night for a BBQ and I am overflowing with thankfulness for the hospitality of karen's friends, Lori & Jason, and... for seasonal fruits and veggies.


#1 my mom sent some homemade pickles and zucchini bread for me.  it always seems my parents receive lots of zucchini, tomatoes, and cucumbers around this time every year and zucchini bread has been one of our favorite recipes to use some of the zucchini for as long as i can remember.  it's just so good.
when karen & i got to my parents in july we saw zucchini on the counter and asked each other where the bread was.  i wanted a slice immediately.  we were surprised not to find any, mom makes a lot of zucchini bread considering they get lots of zucchini.  karen & i quickly (we have lots of practice) whipped up some bread for everyone to enjoy during the weekend.  which we all did.
one of my personal favorite ways to use the cucumber is to make our own pickles.  i like pickles.  yes.  but i eat these straight from the jar.  usually a lot of them at once.  they're delicious.  one of mom's friends usually shares pickles that she's made, but sometimes mom makes them too.
so i didn't only get one, but both and i've already had both today (the pickles are almost gone.)  below you'll see the recipe for the pickles...



SUN PICKLES
 
Put in bottom of quart jar:
    1 tablespoon dill
    several slices of garlic clove
    half cayenne pepper (optional)
Pack jars with cucumbers (1 inch chunks)
    mix: 1 dash tumeric
            a half a pint of vinegar (one cup)
            1 quart of water
            1/4 cup salt (or less) -- I use 1/8 cup
heat above ingredients (do not boil)
Add to jars. Makes 2-4 quarts.  
Add several slices of garlic clove and other half of cayenne pepper
Tighten lids and set in sun 2 or 3 days.

mel, one of the attendees at the bbq, made a delicious peach and (i think) blueberry pie to share at the bbq.  which was delicious.  i love to enjoy fruits and veggies in season and summer is such a great time to do it.

I have a few things to update on today =) Oh I just finished the best meal I've had since I arrived and it was oh sooooo good! I'm so full and happy right now! Spring!

Yes, I know it is not spring yet.   Today's the meteorological beginning of spring or something, isn't it? I definitely suffered some winter blues last month (yeah, it's March!). Kitchen Safety

We moved!  We're in our new place and we just got wifi.  Wahoo! I definitely broke in the kitchen quickly.  I was making a panini type sandwich for a potluck get together so I preheated the oven.  The next thing I knew the fire alarm was going off.  Let me tell you they did not skimp on a very loud fire alarm.  Ahhhhhhhh I opened the oven, which I know you're not supposed to do.  In the moment, I think I needed to see what I was dealing with.  There were definite flames.  Ahhhhhhhh So I called Mike while trying to google what to do.  He was super calm the entire call while I freaked out (it probably helped that he couldn't see the smoke billowing out of the oven).   He said to throw baking soda on it.  I did.  It seemed to fizzle but came back. I searched the apartment for a fire extinguisher (maybe I should have looked for one before this moment). This is while I kept trying to silence the fire alarm (to no avail) and open windows to let out smoke. Then Mike
