Farmer's Market Boxes

Last weekend we went to visit my brother and his family for my nephew's 6th birthday!  They moved a week before the visit so they were a bit overwhelmed with life.  They soon asked if I wanted to take the last box and 1/2 of their farmer's market boxes home with me.  It's the last of the summer boxes they signed up for and they were just tired of the creativity required to cook with vegetables they're not used to.

YES!


First, you may be wondering what a farmer's market box is.  While I have not signed up for one, what I understand is you sign up for weekly boxes through a season, in their case summer.  You'll get assorted items from a local farmer, but you won't know what you're getting.  They did receive an email each week highlighting a few of the vegetables with a recipe suggestion or two.


I was so excited to try out a few things I haven't cooked with before.


Creamy Crock Pot Butternut Mac & Cheese - I substituted delicata squash for the butternut because that's what I had.  I liked this so much!


Spicy Cauliflower Red Lentil Burgers - We had cauliflower that was going bad and we didn't want to eat it as a side every night.  That's one note.  Same as most farmer's markets, you can't delay on eating the food.  These were a bit blah for us and definitely not spicy...add more spice if you make it.

Delicata Delish - I'd add more seasoning to this too, but I'm really liking delicata squash, which I hadn't had before this box.
I like to put leftovers in boxes for lunch right after we're done eating so they're easy to grab and go.

Vegan Okra and Tomato Stew - This was a triple winner because I used okra, tomato, peppers and thyme all from the box.  If I make it again, I'll likely add some pinto beans or some legume to add some protein.

Potato Leek Soup - Leeks.  Thyme.  Check.  Check.  This one's not pretty, but it's delicious. I still have a lot of thyme.  How do you use these herbs before they go bad???

Spring!

Yes, I know it is not spring yet.   Today's the meteorological beginning of spring or something, isn't it? I definitely suffered some winter blues last month (yeah, it's March!). I have a few things to update on today =) Oh I just finished the best meal I've had since I arrived and it was oh sooooo good! I'm so full and happy right now! Kitchen Safety

We moved!  We're in our new place and we just got wifi.  Wahoo! I definitely broke in the kitchen quickly.  I was making a panini type sandwich for a potluck get together so I preheated the oven.  The next thing I knew the fire alarm was going off.  Let me tell you they did not skimp on a very loud fire alarm.  Ahhhhhhhh I opened the oven, which I know you're not supposed to do.  In the moment, I think I needed to see what I was dealing with.  There were definite flames.  Ahhhhhhhh So I called Mike while trying to google what to do.  He was super calm the entire call while I freaked out (it probably helped that he couldn't see the smoke billowing out of the oven).   He said to throw baking soda on it.  I did.  It seemed to fizzle but came back. I searched the apartment for a fire extinguisher (maybe I should have looked for one before this moment). This is while I kept trying to silence the fire alarm (to no avail) and open windows to let out smoke. Then Mike
