PIZZA

I mentioned I was going to tackle pizza crust.  And that I did!


This is the recipe I used from Prevention:


3/4 cup warm water (105º-115ºF)
1 package (1/4 oz) active dry yeast
1/2 tsp sugar
1 c whole wheat flour
1 c all-purpose flour
1 1/2 tsp extra virgin olive oil
1 tsp kosher salt  Not sure what the importance of kosher salt is.  I used salt.


•Stir together 3/4 cup warm water, 1 package (1/4 oz) active dry yeast, and 1/2 teaspoon sugar.  Let stand until foamy, about 10 minutes.
•Stir in 1 cup whole wheat flour, 1 cup all-purpose flour, 1 1/2 tsp extra virgin olive oil, and 1 tsp kosher salt.
•Knead dough on lightly floured surface until smooth, about 2 minutes.
•Put in lightly oiled bowl.  Cover bowl loosely with plastic wrap and let dough rise until doubled in size, about 1 hour. 
•Form dough into 4 balls.
•Roll out dough ball on very lightly floured surface until 1/8" thick (about 10" diameter).
•Transfer to baking sheet lined with plastic wrap and cover tightly with another sheet of plastic.  Repeat with remaining dough.
•Freeze dough until firm (about 10 minutes) or ready to use.



I decided I would have a different pizza for each crust.

then smoky corn & black bean pizza.  (I roughly followed the recipe.)
i know their pictures look better than mine.  As you can probably tell... I don't really care what my food looks like.  I'm more about taste than looks...



Margherita was my final choice.  Yum!  This one didn't look good (even though it tasted wonderful) so this is a picture from where I got the recipe ;)

and other cooking news
cupcakes.
For my cubemate, Rubina's, birthday I threw together some cupcakes.  I used this vegan recipe.  Very easy and delicious.  


I really wanted to make chocolate cupcakes with peanut butter icing.  Every time I've made icing, it doesn't turn out.  I blame it on not having a mixer, but it's probably my fault.  So I wanted to buy peanut butter icing.  Impossible.  I even called a cupcake place near me and asked if they would sell me icing.  Nope.  (It was worth a try.)  
I ended up buying some whipped butter cream icing at Jewel and put peanut butter chips on it.

And the big day...  or rather the day we celebrated Rubina's day of birth (3 days before her bday)

I have a few things to update on today =) Oh I just finished the best meal I've had since I arrived and it was oh sooooo good! I'm so full and happy right now! Spring!

Yes, I know it is not spring yet.   Today's the meteorological beginning of spring or something, isn't it? I definitely suffered some winter blues last month (yeah, it's March!). Two days later I'm still feeling amazing after my juice cleanse .  Yes, it's possible that's not what it's from, but considering nothing else has really changed (except starting a new month, which I am so excited about), it's getting the credit. Kitchen Safety

We moved!  We're in our new place and we just got wifi.  Wahoo! I definitely broke in the kitchen quickly.  I was making a panini type sandwich for a potluck get together so I preheated the oven.  The next thing I knew the fire alarm was going off.  Let me tell you they did not skimp on a very loud fire alarm.  Ahhhhhhhh I opened the oven, which I know you're not supposed to do.  In the moment, I think I needed to see what I was dealing with.  There were definite flames.  Ahhhhhhhh So I called Mike while trying to google what to do.  He was super calm the entire call while I freaked out (it probably helped that he couldn't see the smoke billowing out of the oven).   He said to throw baking soda on it.  I did.  It seemed to fizzle but came back. I searched the apartment for a fire extinguisher (maybe I should have looked for one before this moment). This is while I kept trying to silence the fire alarm (to no avail) and open windows to let out smoke. Then Mike
