Valentine's Day Treat/Tragedy

I hope you had a lovely Valentine's day!

My Valentine's treat for myself was to go on a lakefront run.  I haven't run in Chicago in waaayyy too long.  I'm trying to be good and give my knee a break.  I miss it like crazy.  (judge as you wish)  It gives me a clear head and makes me feel so much better.

So why was this a treat AND tragedy at the same time?
I always love a run on the lake (although when it's 100+ degrees it's a bit harder to love). I was able to go the farthest I've gone on a flat surface (for some reason hills don't bother my knee as much) since probably November.  With that said, I ran 4 miles, which is quite disappointing for me.  My knee started twitching around mile 3.5, but didn't lock up like it had been.  So that's positive.

The fact that I felt some pain pretty much killed my lingering hope of running a marathon in April.  This is very sad news.

And why do people keep changing how you're supposed to run.  First, all I heard was mid foot mid foot.  Now there's a new study saying whatever.  Oh man, I am sick of it.

Veggie Tinga

I made Vegetarian Tinga for a mexican pot luck I went to on Tuesday.

Many people have never heard of Tinga, let alone knowing you can make it vegetarian style.  You absolutely can!  And it's so easy.

Traditional tinga is made of shredded chicken with chipotle flavoring.  I used cabbage instead of the chicken.

I looked at a lot of different recipes online, but couldn't find a recipe for the veggie tinga I had in mind, so I ended up combining the guidelines of those recipes and making my own.

Here's what I did:

1 onion
1 head of cabbage
1 7oz. can chipotle (the peppers in adobo sauce)
5 ish roma tomatoes
olive oil

-Saute onion in olive oil.
-Chop cabbage (I used youtube to help me figure out the best way to do that) add to onion and saute.
-Blend the chipotle and tomatoes in blender.
Note:  Some people only like to add the sauce from the chipotle peppers.  I added the entire can (including the peppers themselves).  It's up to you depending on how spicy you want it.  (I like my food s…

Saturday I was in San Antonio for work, I did get to hang out with a friend while I was in town so that definitely made the trip better, combined with the fact that the volunteers there are just wonderful.

I knew Sunday was going to be overwhelming before I left on Friday.  I always write lists when I'm overwhelmed, I wrote a list.  (Even though I hardly referenced it on Sunday.)  Just writing it down helps me feel better.

Sunday we registered for at two places, starting at 9am.  When we finished the second one (which we were both dragging ourselves through) it felt like it was time for was 2pm.  Guys, this experience brought so much clarity to people's registerys.  I would not necessarily say it was a fun experience.  And I am very happy Mike seems to have a vision because we would limit the insane number of options down to a couple options together and then I would say I don'…

5 Year Journal - Again

I know I've mentioned my 5 year journal here before, but now that I'm in my second year and everyday I get to look back at what I did that day last year I can't tell you how much I love it.  And I imagine I will love it more and more as the years go on.  I'm already dreaming of year 5!  

It takes a maximum of 5 minutes to jot down a few notes from the day and then you move on.

I have this one.  (I'm pretty sure it was more than $12 when my grandma got it for me so that looks like a steal.)
But this one looks amazing!
