Elevator Talk

No, I'm not referring to the elevator pitch.  (I'm definitely not good at talking about myself in 20 seconds.  Nope.)

I mean elevator talk.  When you ride the elevator with people from your office who you may only ever talk to on the elevator.

So here we go.  I work on the 19th floor and often leave at the same time as people who work on the other side of my floor.  I only see them/interact with them on the elevator...maybe the kitchen sometimes.

Here's my guide:

Monday: weekend recap talk
Tuesday: you may be able to squeeze in the weekend recap, weather 
Wednesday: this is the awkward day, it seems to go over well to ask how their week is going
Thursday: prep for the weekend
Friday: prep for the weekend, we made it through the week, I have found asking, 'How was your week?' is kind-of weird.

Any day: weather (always safe)

Had a big event?  You can ask about that weeks later.  (Sometimes I'll see people once/month ish.)

I'm not one who likes to just stand on the elevator silently since it feels somewhat awkward to me.  So this is what I usually end up talking about and it works okay for me!

Veggie Tinga

I made Vegetarian Tinga for a mexican pot luck I went to on Tuesday.

Many people have never heard of Tinga, let alone knowing you can make it vegetarian style.  You absolutely can!  And it's so easy.

Traditional tinga is made of shredded chicken with chipotle flavoring.  I used cabbage instead of the chicken.

I looked at a lot of different recipes online, but couldn't find a recipe for the veggie tinga I had in mind, so I ended up combining the guidelines of those recipes and making my own.

Here's what I did:

1 onion
1 head of cabbage
1 7oz. can chipotle (the peppers in adobo sauce)
5 ish roma tomatoes
olive oil

-Saute onion in olive oil.
-Chop cabbage (I used youtube to help me figure out the best way to do that) add to onion and saute.
-Blend the chipotle and tomatoes in blender.
Note:  Some people only like to add the sauce from the chipotle peppers.  I added the entire can (including the peppers themselves).  It's up to you depending on how spicy you want it.  (I like my food s…

A Good Run

It's been warmer than usual around here for the past month.  Don't get me wrong, we like it.  We made it without air conditioning until Mike's family visited for Memorial Day.  Although, my Chicago brain still gets a little weary when I see a week of 90+ temperatures.  But then I sit out on our back porch all day and it's actually pretty comfortable.

This morning I was ready for the loop run around Forest Park.  I rolled out of bed earlier than normal, especially considering today I have a comp day for working over the weekend, and laced up my shoes.  My legs, honestly, felt a bit achy, but I told myself to give it a try and I would take breaks if needed.  

We had a well rounded dinner last night.  I made this while Mike mowed the grass.  We use one of these because it's really all we need.  In the summer I usually keep meals pretty easy, but last night it felt like we needed something more substantive.

Sunday our day went a little like this.

I always get up before Mike and I take my time enjoying coffee and making my breakfast while diving in to our plan for the day.

Once Mike got up we took our typical 8 mile run, which was really beautiful and I'm starting to get myself back in running shape from the lax I always seem to take in the winter.  Although I didn't take as much of a break this winter as I usually do.

Errands.  Does anyone like these?  I do not.  We went to an inner suburb that has all the stores we need and Mike always comments on how poorly designed it is.

Mike focused on his homework and I spent the next three hours hanging a gallery wall.  This is the first gallery wall I've hung that I wanted multiple columns to be even and line up.  It was not the most enjoyable project.  And I'm sure it's not perfect, except in my eyes.  Three hours.
